Manual meat grinder

A clamp-on hand grinder for grinding your own beef, pork or chicken

Hopper, auger, die plate, clamped to the counter and turned by hand. Grinding at home means choosing the cut and the coarseness. Those two choices are most of the gap between a good burger and a supermarket tray. For a couple of pounds at a time it beats an electric grinder once you count the cleaning, at a fraction of the price. Keep the meat and the parts cold. Warm fat smears rather than cutting, and the texture turns pasty.

Grinds his own beef because he wants control over the grind, while saying store-bought ground beef is fine. He used to run an electric grinder and moved off it: for the amounts a home cook deals with, he finds a clamp-on manual one does the job faster and with less trouble.
