Swiss kitchen machine that shaves frozen mixes into ice cream to order
A Swiss machine built for restaurant kitchens. You freeze a mix solid in a metal canister, drop it in, and a blade spinning at around 10,000 rpm under vacuum shaves off as many portions as you ask for. Because it works on frozen product rather than churning a liquid, the texture lands closer to gelato than to a home churn, and whatever is left goes back in the freezer.

He keeps one and freezes a vegan mix for it: four kinds of nuts, dates and cocoa powder. His verdict is that nothing else makes ice cream this well, with the caveat attached in the same breath, that it only makes sense if you care a lot about homemade ice cream.
